Healthy No Bake Mini carrot muffins

This is a great little recipe,requires no flour,no eggs,no dairy,no sugar and no hastle.

Ingredients

1 cup grated carrot

1/2 cup of almond flour

1/2 cup of  grated cocunut

2 tbls chia

1/2 cup of raisins

1/2 cup of walnuts

3 tbls water

1 tsp cinnamon

1tsp nutmeg

1/2 tsp vanilla

1 tsp orange zest

For the topping (my favourite bit)

1 cup of cashews

2 tbls manuka honey (or any honey will do)

1/2 orange zest

2 tbs juice of an orange

2 tbs of canola oil or cocunut oil

Mix the water and the chia together and leave a side for a while to form a jelly type substance.

Combine all the dry ingredients in a bowl and mix in the chia when it´s ready. Blend the ingredients together well.

Squash the mixture into individual mini muffin moulds .

To make the topping, place all the ingredients into a food processor and blitz until you have a kind of paste.

Top the mini muffins with this and pop in the fridge for up to an hour.

Malcolm tells me they taste like a dessert version of carrot salad, i think it taste´s like delicious! And no guilt,maybe a small bit….
